Kefir ist ein traditionell fermentiertes Milchgetränk, das durch die Zugabe sogenannter Kefirknollen entsteht.
Die Kefirknollen bestehen aus Milchsäurebakterien und Hefen, die den Milchzucker umwandeln. Während des Fermentationsprozesses wird der Milchzucker (Laktose) und andere Nährstoffe von den Mikroorganismen verstoffwechselt, wodurch ein leicht säuerliches, prickelndes Getränk mit probiotischer Wirkung entsteht.
Kefir gilt als funktionelles Lebensmittel mit einer Vielzahl gesundheitlicher Vorteile. Er enthält neben lebenden Milchsäurebakterien auch Enzyme, kurzkettige Fettsäuren, Vitamine (z. B. B12, K2) und bioaktive Peptide. Studien zeigen, dass Kefir die Darmflora regulieren, entzündliche Prozesse eindämmen und die Barrierefunktion der Darmschleimhaut stärken kann. Besonders relevant ist dies bei Reizdarmsyndrom, chronisch-entzündlichen Darmerkrankungen oder nach Antibiotikatherapien.
