What is E203 (Calcium Sorbate)?
E203 is the European approval number for calcium sorbate, the calcium salt of sorbic acid. It belongs to the group of sorbates, which are among the most widely used preservatives in the food industry. Calcium sorbate appears as a white crystalline or powdery solid and is moderately soluble in water.
Uses and Applications
E203 is used as a preservative in a variety of food products to extend shelf life. It is particularly effective against molds, yeasts, and certain bacteria. Common applications include:
- Cheese and dairy products
- Baked goods and bread
- Fruit products, jams, and preserves
- Beverages and fruit juices
- Margarine and delicatessen salads
- Dried fruits and nuts
Mechanism of Action
In aqueous food environments, calcium sorbate releases sorbic acid, the active antimicrobial compound. Sorbic acid inhibits specific enzymes in fungi and yeasts that are essential for their metabolism and growth, thereby effectively slowing or completely preventing microbial proliferation. Its efficacy depends on the pH level of the food and is strongest in acidic conditions (pH below 6.5).
Regulatory Status
E203 is approved as a food additive in the European Union under Regulation (EC) No 1333/2008 on food additives. Its use is restricted to specific food categories, and maximum permitted levels apply. The ADI (Acceptable Daily Intake) for sorbates as a group has been set by the European Food Safety Authority (EFSA) at 3 mg per kg body weight per day (expressed as sorbic acid).
Safety and Tolerability
Sorbates, including calcium sorbate, are generally considered well-tolerated and safe. They are metabolized in the human body in a manner similar to naturally occurring fatty acids. In rare cases, hypersensitivity reactions may occur, particularly in individuals with known sensitivity to preservatives. Possible reactions include:
- Skin irritation or contact dermatitis (upon direct skin contact)
- Pseudo-allergic reactions in sensitive individuals
- Gastrointestinal discomfort at very high intake levels
When used as intended and within the permitted maximum levels, E203 is considered safe for human health.
Labeling Requirements
In the European Union, E203 must be declared on the ingredient list of food products as preservative E203 or calcium sorbate. This allows consumers to make informed choices about the products they consume.
