What is Calcium Sulfate?
Calcium sulfate (chemical formula: CaSO4) is an inorganic compound composed of calcium and sulfate. It occurs naturally as a mineral, for example as gypsum (calcium sulfate dihydrate, CaSO4·2H2O) or as anhydrite (anhydrous calcium sulfate). Calcium sulfate is used across a wide range of industries: in construction as plaster and gypsum board, in medicine as a resorbable bone filler, and in the food industry as an approved additive.
Calcium Sulfate as a Food Additive (E516)
In the European Union, calcium sulfate is approved as a food additive under the designation E516. It is used primarily in the following roles:
- Firming agent: It stabilizes the structure of foods such as tofu and canned vegetables.
- Carrier substance: It acts as a carrier for other additives or flavorings.
- Flour treatment agent / leavening agent: In some countries, it is used to improve the baking properties of flour.
- Calcium source: It can be used to fortify foods with calcium, for example in plant-based milk alternatives or infant formula.

Orthopedics and Bone Surgery
Calcium sulfate pellets or cements are used as a resorbable bone void filler. Once placed in bone defects, the material is gradually broken down by the body and replaced by newly formed bone tissue. This approach is used, for example, after the removal of bone cysts or in the treatment of bone infections (osteomyelitis).
Wound Care
In specialized wound dressings and as a carrier for local antibiotics, calcium sulfate is used to support healing and combat infection.
Pharmaceutical Excipients
In the manufacture of tablets and capsules, calcium sulfate serves as a filler and binder, improving the processability and stability of pharmaceutical products.
Safety and Tolerability
Calcium sulfate is considered safe when used as intended. The European Food Safety Authority (EFSA) has evaluated E516 and classified it as safe for use in food. Because calcium sulfate is poorly water-soluble, only small amounts are absorbed in the gastrointestinal tract. No adverse effects are known from normal consumption through food.
In very high doses or upon inhalation of calcium sulfate dust (e.g., in industrial settings), irritation of the respiratory tract may occur. However, for the general population consuming calcium sulfate through food, no relevant health risk exists.

Since calcium sulfate is a compound of the essential mineral calcium, it can contribute to meeting daily calcium requirements when used for food fortification. Calcium is essential for:

The World Health Organization (WHO) and national health authorities recommend a daily calcium intake of approximately 1000 mg for adults.
