E576 is the official European Union designation for magnesium gluconate, the magnesium salt of gluconic acid. It is an authorised food additive listed under E number 576 within the EU. The substance appears as a white to slightly yellowish powder and is readily soluble in water.
Chemical Properties
Magnesium gluconate is formed by combining magnesium with gluconic acid, a naturally occurring organic acid typically produced through microbial fermentation of glucose. Its chemical formula is C12H22MgO14. Compared to other magnesium compounds, magnesium gluconate is considered to be particularly gentle on the stomach and gastrointestinal tract.
