What is E1202?
E1202 refers to the food additive polyvinylpolypyrrolidone, commonly known as PVPP. It is a synthetic, insoluble polymer used in the food and beverage industry as a clarifying and stabilizing agent. PVPP is authorized under EU food additive number E1202 and is classified as a processing aid.
Production and Chemical Properties
PVPP is synthetically produced from vinylpyrrolidone monomers. It is an insoluble, cross-linked polymer in powder form that does not dissolve in the digestive tract and is therefore excreted unchanged by the body. Its special molecular structure allows PVPP to bind polyphenols and tannins either reversibly or irreversibly.
Applications
E1202 is primarily used in the following areas:
- Beer production: PVPP removes polyphenols responsible for haze formation and flavor changes (known as chill haze), thereby extending the shelf life and clarity of beer.
- Wine production: PVPP is also used in winemaking for stabilization and clarification, reducing oxidative discoloration and bitterness.
- Fruit juices and other beverages: To improve color, taste, and stability.
- Pharmaceutical industry: PVPP is also used as an excipient in tablet formulations, where it acts as a disintegrant.
Mechanism of Action
PVPP selectively binds polyphenols – plant-based compounds found in hops, grapes, and other raw materials. These polyphenols can form complexes with proteins, leading to cloudiness or precipitation in beverages. By binding to PVPP, these unwanted reactions are prevented. Since PVPP itself is not absorbed by the body, no residues remain in the final product when the agent is filtered out prior to bottling, as is standard practice.
Safety and Authorization
E1202 is considered safe by the European Food Safety Authority (EFSA) and the World Health Organization (WHO). Since PVPP is not absorbed by the body and, as a processing aid, typically does not remain in the final product, it is classified as safe at permitted levels. No relevant toxicological risks to humans have been identified.
Labeling Requirements
Since E1202 is used as a processing aid and is removed before bottling, there is generally no labeling requirement in the ingredient list of the final product. However, if any residue remains in the product, declaration may be required under applicable regulations.
