E1204 is the EU food additive designation for Pullulan, a natural polysaccharide used as a glazing agent in dietary supplements and certain foods.
What is E1204 (Pullulan)?
E1204 is the EU approval number for Pullulan, a naturally occurring polysaccharide (complex carbohydrate) produced through the fermentation of the yeast-like fungus Aureobasidium pullulans. As a food additive, Pullulan is primarily used in the European Union as a glazing agent (coating agent) for dietary supplements in capsule and tablet form, as well as for certain food products.
Production and Properties
Pullulan is produced biotechnologically through the controlled fermentation of the black yeast Aureobasidium pullulans, which secretes Pullulan as an extracellular polysaccharide. The resulting substance has several notable characteristics:
- Odorless and tasteless
- Water-soluble and forms clear, transparent films
- Biodegradable and non-toxic
- Stable across a wide range of temperatures and pH levels
- Free from animal-derived ingredients (suitable for vegans)
Uses in Food and Dietary Supplements
E1204 is used in the food industry primarily as a coating and film-forming agent. Typical applications include:
- Capsules and tablets: Pullulan is used as a plant-based alternative to gelatin capsules, making it especially suitable for vegan and vegetarian products.
- Fruits and vegetables: As an edible protective coating, Pullulan extends the shelf life of fresh produce by reducing oxygen exposure.
- Confectionery and baked goods: Used to improve surface appearance, gloss, and shelf stability.
- Oral care products: Used as a carrier material in edible oral care strips.
Safety and Tolerability
Pullulan is considered highly safe and well-tolerated. The European Food Safety Authority (EFSA) has classified E1204 as a safe food additive. It is non-allergenic and is not broken down in the human digestive tract, as the body lacks the necessary enzymes. It therefore acts similarly to dietary fiber and is excreted unchanged. No adverse effects are known at typical levels of dietary intake.
Legal Framework in the EU
In the European Union, E1204 is authorized under Regulation (EC) No 1333/2008 on food additives. Its use is restricted to specific food categories, particularly dietary supplements in solid form and as a surface treatment for certain foods such as fruits and confectionery. The quantum satis principle applies, meaning the additive may only be used in the minimum quantity technically necessary.
