What is E1414?
E1414, known as Acetylated Distarch Phosphate, is a chemically modified starch approved as a food additive in the European Union. It belongs to the category of modified starches and is produced from natural starch sources such as maize, wheat, potato, or tapioca through a two-step chemical process involving acetylation and phosphate cross-linking. These modifications give the starch enhanced technological properties that are highly valued in food manufacturing.
Production and Chemical Properties
To produce E1414, native starch is first acetylated using acetic anhydride and then cross-linked using phosphorus oxychloride or sodium trimetaphosphate. This dual chemical modification results in the following improved characteristics:
- Greater resistance to heat, acid, and mechanical processing
- Improved freeze-thaw stability (suitable for frozen food products)
- Smoother and creamier texture in the final product
- Reduced retrogradation (the tendency of starch to recrystallise upon cooling)
Applications in Food
E1414 is widely used in processed foods as a thickener, stabiliser, and gelling agent. Common applications include:

Safety and Regulatory Status
E1414 is authorised in the European Union under Regulation (EC) No 1333/2008 on food additives. The European Food Safety Authority (EFSA) has assessed modified starches, including Acetylated Distarch Phosphate, as safe for human consumption when used within the established maximum levels. No specific Acceptable Daily Intake (ADI) has been assigned by EFSA, as the substance is considered to present no safety concern at the levels used in food.
Stricter regulations and lower maximum permitted levels apply to infant formula and foods for special medical purposes.
Tolerability and Potential Effects
E1414 is generally well tolerated by the vast majority of the population. As a modified starch, it is broken down in the gut in a manner similar to indigestible carbohydrates. When consumed in very large amounts, it may cause bloating or digestive discomfort, as can other starch-based products. Individuals with starch intolerance or an allergy to the source material (e.g., wheat starch in the case of coeliac disease) should pay attention to the origin of the starch used.
Labelling
On food ingredient lists, E1414 must be declared either by its E number E1414 or by its full name Acetylated Distarch Phosphate. This allows consumers to identify the presence of this additive in a product.
