What is E1421?
E1421 refers to starch acetate esterified with vinyl acetate – a chemically modified starch additive used in the food industry as a thickener, stabilizer, and binding agent. The base starch can be derived from various plant sources, including maize, wheat, potato, or tapioca. Through chemical modification with vinyl acetate, the functional properties of native starch are significantly enhanced.
Production and Chemical Properties
E1421 is produced by subjecting native starch to an esterification reaction with vinyl acetate, which introduces acetate groups onto the starch molecules. This targeted chemical modification results in improved physical and functional characteristics:
- Greater resistance to heat, acids, and mechanical stress
- Improved gelling properties and texture stability
- Reduced retrogradation (the tendency of starch to recrystallize after cooling)
- Enhanced film-forming ability
Use in Food Products
E1421 is used in a wide variety of processed foods to improve texture, consistency, and shelf stability. Common applications include:

Safety and Tolerability
The European Food Safety Authority (EFSA) and the Joint FAO/WHO Expert Committee on Food Additives (JECFA) have evaluated modified starches, including acetylated starches, and consider them generally safe when used as intended. Because E1421 is digested in a manner similar to native starch, it is well tolerated by most individuals.
Individuals with an intolerance to the source plant material (e.g., wheat in cases of coeliac disease) should pay attention to the starch origin declared on the product label, as allergen-containing source materials must be disclosed.
Labelling
On food labels, this additive is listed either by its E-number E1421 or under the full name starch acetate esterified with vinyl acetate. Food manufacturers are required to declare the origin of the starch if it is derived from an allergenic source material.
