What is E225?
E225, known as potassium disulfite (also called potassium metabisulfite or potassium pyrosulfite), is an inorganic salt of sulfurous acid belonging to the group of sulfite compounds. It is used as a food additive with both preservative and antioxidant properties. The substance appears as a white to yellowish powder and releases sulfur dioxide (SO2) upon contact with water or acid, which is the biologically active compound responsible for its effects.
Use in Food Products
E225 is used in the food industry to protect products from spoilage caused by microorganisms, yeasts, and molds, and to prevent oxidative discoloration. Typical applications include:
- Wine and fruit wine (as a stabilizer and preservative)
- Dried fruits (e.g., apricots, raisins)
- Fruit juices and concentrates
- Potato products (e.g., frozen potatoes, french fries)
- Seafood preparations
- Vinegar and other acidic foods
Mechanism of Action
E225 exerts its effects primarily through the release of sulfur dioxide (SO2) and sulfite ions in aqueous solution. These compounds inhibit the growth of yeasts, bacteria, and molds by disrupting enzymatic processes within microorganisms. In addition, they act as reducing agents, preventing oxidation reactions that can lead to undesirable discoloration and flavor changes in food products.
Regulatory Status
E225 is approved as a food additive in the European Union under Regulation (EC) No. 1333/2008. Specific maximum permitted levels apply depending on the food category to ensure consumer safety. In some countries outside the EU, approval may be restricted or different limits may apply.
Health Considerations and Tolerability
Sulfite compounds such as E225 can trigger adverse reactions in sensitive individuals. People with sulfite sensitivity or asthma may react to consuming sulfite-containing foods. Possible symptoms include:
- Respiratory irritation and bronchospasm (particularly in people with asthma)
- Skin reactions such as redness or itching
- Gastrointestinal complaints (nausea, abdominal pain)
- Headaches
For this reason, EU labeling regulations require that sulfite content at or above 10 mg/kg or 10 mg/l in the final product must be declared on the packaging as an allergen (with a statement such as: contains sulfites).
Assessment by Regulatory Authorities
The European Food Safety Authority (EFSA) has evaluated sulfite compounds including E225 and established an acceptable daily intake (ADI) of 0.7 mg/kg body weight per day (expressed as SO2 equivalent). When used at approved levels, E225 is considered safe for the general population. However, sulfite-sensitive individuals should avoid products labeled as containing sulfites.
