What is E234 (Nisin)?
E234 is the EU approval number for Nisin, a naturally occurring antimicrobial peptide produced by the lactic acid bacterium Lactococcus lactis. It belongs to a group of compounds known as bacteriocins and is one of the oldest and most thoroughly studied natural preservatives used in the food industry.
Origin and Production
Nisin is obtained through the biotechnological fermentation of Lactococcus lactis. Because it is a product of microbial fermentation, it is often perceived by consumers as a nature-derived preservative. It has been commercially used since the 1950s and is approved in numerous countries worldwide.
Mechanism of Action
Nisin acts selectively against gram-positive bacteria by binding to a specific molecule in the bacterial cell wall known as Lipid II. This triggers two key mechanisms:
- Inhibition of cell wall synthesis, preventing bacterial cell division
- Formation of pores in the cell membrane, leading to bacterial cell death
Nisin is particularly effective against harmful pathogens such as Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus, and Clostridium species, including spore-forming bacteria. It has limited activity against gram-negative bacteria, yeasts, and molds.
Use in Food Products
E234 is used in the food industry to extend the shelf life of certain products and to improve food safety. Typical applications include:
- Cheese and processed cheese products: protection against unwanted bacteria and spore-forming organisms
- Meat and meat products: extension of shelf life
- Canned goods and pates: inhibition of Clostridium species
- Dairy products: protection against recontamination after pasteurization
Within the European Union, the use of E234 is restricted to specific food categories and is regulated by Regulation (EC) No. 1333/2008.
Safety and Health Assessment
Nisin is considered safe for human consumption. The European Food Safety Authority (EFSA) has repeatedly evaluated E234 and confirmed its safety when used within approved maximum limits. In the human digestive tract, Nisin is rapidly broken down by digestive enzymes and is therefore not biologically active.
No significant allergies or intolerances to Nisin have been identified in humans. Due to its antimicrobial activity against gram-positive bacteria, Nisin is also being investigated in medical research as a potential agent against antibiotic-resistant pathogens.
Labeling Requirements
According to EU law, food products containing E234 must be labeled accordingly. On the ingredient list, the substance appears either as E234 or under its chemical name Nisin.
