What is E242 (Dimethyl Dicarbonate)?
E242, chemically known as dimethyl dicarbonate (DMDC), is a synthetic food additive approved in the European Union as a preservative and antimicrobial treatment agent for certain beverages. It is used to eliminate microorganisms such as yeasts, moulds, and specific bacteria without the need for heat treatment – a process commonly referred to as cold sterilisation.
Chemical Properties
Dimethyl dicarbonate is a colourless liquid with a slightly pungent odour and the chemical formula C4H6O5. In an aqueous environment, it reacts very rapidly and decomposes within a few hours into carbon dioxide (CO₂) and methanol, leaving no detectable residues. The amounts of methanol produced are very small and remain well below levels considered harmful to health.
Applications
E242 is primarily used in the beverage industry. Typical applications include:
- Non-alcoholic soft drinks and fruit juices
- Wine and low-alcohol wines
- Tea and coffee-based drinks
- Sports and isotonic beverages
Compared to heat-based preservation methods, cold sterilisation with DMDC has the advantage of largely preserving the flavour, colour, and nutritional value of the beverage.
Mechanism of Action
DMDC works by inhibiting microbial enzymes. It reacts with amino groups of proteins and enzymes in microorganisms – particularly glycolytic enzymes such as glyceraldehyde-3-phosphate dehydrogenase – blocking their metabolic activity and causing cell death. Once the reaction is complete, E242 decomposes entirely and leaves no active residues in the product.
Regulatory Status
In the European Union, E242 is authorised under Regulation (EC) No. 1333/2008 on food additives. The maximum permitted level is generally 250 mg/l for most applications. Since the substance decomposes completely after treatment, it is no longer detectable at the time of consumption. Regulations may differ in countries outside the EU.
Safety and Health Assessment
Both the European Food Safety Authority (EFSA) and the former Scientific Committee on Food (SCF) have assessed E242 as safe when used within the approved maximum levels. The by-products formed during decomposition – particularly methanol – are produced in quantities far below toxicologically relevant thresholds. For healthy adults, E242 at approved concentrations is considered safe.
Labelling
In the ingredients list of food products and beverages, E242 must be declared either by its E number (E242) or by the name dimethyl dicarbonate. However, since the substance decomposes completely after treatment, it is no longer present in the final product, which is why many manufacturers do not list it separately – a practice that may be legally permissible when no detectable residues remain.
