What is E281 (Sodium Propionate)?
E281 is the EU designation for sodium propionate (also known as sodium propanoate), the sodium salt of propionic acid. It is a synthetically produced food additive used by the food industry as a preservative. Sodium propionate appears as a white, odourless or faintly propionic-acid-scented powder and is highly soluble in water.
Uses and Applications
E281 is primarily used to extend the shelf life of food products by inhibiting the growth of moulds and certain bacteria. Typical applications include:
- Baked goods such as bread, rolls, and toast
- Cheese products and cheese rind
- Fine bakery products and packaged snacks
- Grain-based products and flour-based foods
In the European Union, the use of E281 is regulated by Regulation (EC) No 1333/2008 on food additives. Permitted maximum levels vary depending on the food category.
Mechanism of Action
Sodium propionate exerts its antimicrobial effect through the release of propionic acid, which inhibits fatty acid synthesis and cellular metabolism in microbial cells. The undissociated propionic acid penetrates the cell membranes of moulds and bacteria, lowering the intracellular pH and blocking essential enzymatic reactions, thereby preventing cell growth. Its effectiveness is therefore greatest in an acidic environment.
Safety and Health Assessment
Propionates occur naturally in many fermented foods such as cheese, yoghurt, and sourdough bread, and are recognised and metabolised by the human body as normal metabolic compounds. The European Food Safety Authority (EFSA) has evaluated propionic acid and its salts (E280–E283) and classified them as safe when used within approved maximum limits. No ADI (Acceptable Daily Intake) value has been established, as propionates are considered substantially equivalent to natural food constituents.
Possible Intolerances
In sensitive individuals, high amounts of propionates may in rare cases trigger gastrointestinal complaints such as nausea or bloating. Some studies have discussed links between elevated propionate intake and behavioural issues in children; however, the scientific evidence is not considered conclusive. Individuals with a known sensitivity to propionates should carefully check the ingredient lists of processed food products.
Labelling
Under EU food labelling law, E281 must be listed in the ingredients of a product either as E281 or as sodium propionate. This allows consumers to actively look out for this additive.
