What is E283 (Potassium Propionate)?
E283 is the EU designation for Potassium Propionate (also known as potassium propanoate), the potassium salt of propionic acid. It belongs to the group of preservatives used as food additives. In its pure form, E283 appears as a white, crystalline powder that is readily soluble in water.
Uses and Occurrence
E283 is primarily used in the food industry to extend the shelf life of products. Typical applications include:
- Baked goods (e.g. bread, toast, rye bread, semi-finished cake products)
- Cheese and cheese preparations
- Cereal preparations and starch-based products
- Pre-made pasta and ready-to-eat meals
Propionic acid and its salts also occur naturally in small amounts in certain foods, such as Swiss cheese, where they are produced through bacterial fermentation.
Mechanism of Action
Potassium propionate acts as an antimicrobial agent by inhibiting the growth of moulds (e.g. Aspergillus and Penicillium species) and certain bacteria (e.g. Bacillus species). The mechanism involves the inhibition of enzymes involved in the fatty acid metabolism of microorganisms, thereby preventing their growth and reproduction. E283 is particularly effective at mildly acidic pH levels, which are typically found in baked goods.
Regulatory Approval
E283 is approved in the European Union under Regulation (EC) No. 1333/2008 on food additives for specific food categories. Permitted maximum levels vary by product category. In some baked goods, specific quantity limits apply (e.g. up to 3,000 mg/kg). Outside the EU, propionates are also approved and classified as safe in many countries, including the United States and Australia.
Safety and Health Assessment
The European Food Safety Authority (EFSA) has classified potassium propionate and related propionates as safe when used within approved quantities. Propionic acid is processed in the human body as a normal component of fatty acid metabolism and is rapidly broken down.
Some studies have discussed whether higher intake of propionates could have negative metabolic effects (e.g. insulin resistance in animal studies). However, these findings have not been confirmed in humans at the quantities typically found in food. Allergic reactions to E283 are rare but may occur in sensitive individuals.
Labelling Requirements
Foods containing E283 must declare it on the ingredients list, either as E283 or as Potassium Propionate (or potassium propanoate).
