Since potassium ascorbate is broken down in the body into ascorbic acid and potassium ions, it also contributes to the body's Vitamin C supply.
Safety and Tolerability
E303 is considered safe and has been assessed as such by the European Food Safety Authority (EFSA) and the FAO/WHO. Since potassium ascorbate is the potassium salt of Vitamin C, it has a similar safety profile to Vitamin C itself. However, in high amounts, the elevated potassium content may be relevant for individuals with kidney disease or hyperkalaemia (elevated potassium levels in the blood). For healthy individuals, E303 is regarded as safe in the amounts typically found in food products.
