What is E321?
E321, chemically known as Butylated Hydroxytoluene (BHT), is a synthetic, fat-soluble antioxidant. It is widely used in the food industry, cosmetics, and pharmaceutical products to prevent the oxidation of fats and fat-soluble substances, thereby extending the shelf life and maintaining the quality of products.
Chemical Properties
BHT is a white to light yellow crystalline solid with a faint characteristic odor. It is readily soluble in fats and organic solvents but virtually insoluble in water. This fat-solubility makes it particularly suitable for protecting fatty foods from becoming rancid.
Mechanism of Action
E321 acts as a free radical scavenger. It interrupts the chain reaction of lipid peroxidation by neutralizing free radicals that form during the oxidation of unsaturated fatty acids. This prevents undesirable changes in taste, odor, and the degradation of nutrients caused by oxidation.
Use in Food Products
In the European Union, E321 is approved as a food additive. It is used in a variety of products, including:
- Chewing gum and gum base
- Dehydrated soups and broths
- Fat-rich snack products
- Processed nuts and seeds
- Pet food
- Packaging materials (for indirect food preservation)
The permitted maximum levels in the EU are strictly regulated and range from 25 to 200 mg/kg depending on the food category.
Use Outside the Food Industry
Beyond food, BHT is widely used in cosmetics (e.g., creams, lipsticks, shampoos), plastics, mineral oils, and pharmaceuticals to stabilize active ingredients and formulations.
Safety and Health Assessment
The safety of E321 is regularly evaluated by authorities such as the European Food Safety Authority (EFSA) and the Joint FAO/WHO Expert Committee on Food Additives (JECFA). The current Acceptable Daily Intake (ADI) established by JECFA is 0.3 mg/kg body weight per day.
Animal studies at very high doses have shown certain effects on the liver and hormonal system. In humans, no adverse health effects have been documented when BHT is consumed within the approved maximum limits. Nevertheless, BHT is viewed critically in some countries, and some individuals report intolerance reactions such as skin irritation or gastrointestinal discomfort.
Labelling
In the EU, E321 must be declared in the ingredient list either by its full name Butylated Hydroxytoluene or its E-number E321. Consumers who wish to avoid food additives can check the ingredient list accordingly.
