What is E326 (Potassium Lactate)?
E326 is the EU approval number for potassium lactate, the potassium salt of lactic acid. It is a food additive produced either synthetically or through fermentation, widely used in the food industry. Potassium lactate typically appears as a clear, colourless to slightly yellowish liquid or as a white powder and is highly soluble in water.
Origin and Production
Potassium lactate is produced by neutralising lactic acid -- obtained through Lactobacillus fermentation of carbohydrates -- with potassium hydroxide or potassium carbonate. The resulting compound is chemically known as the potassium salt of 2-hydroxypropanoic acid. Since the lactic acid can be derived from natural plant sources such as sugarcane or corn, the final product may also be found in organic food products.
Uses in Food
E326 serves several technological purposes in food production:
- Acidity regulator: Potassium lactate stabilises the pH of food products, preventing unwanted changes in acidity.
- Preservative: It inhibits the growth of microorganisms, particularly bacteria such as Listeria monocytogenes and Clostridium botulinum, thereby extending shelf life.
- Antioxidant: E326 protects foods from oxidative spoilage, helping to maintain colour and flavour.
- Humectant: It binds moisture and helps prevent foods from drying out.
Typical applications include processed meat and poultry products, ready meals, baked goods, sauces, dressings, and certain cheese varieties.
Health Assessment and Safety
According to the European Food Safety Authority (EFSA), potassium lactate is considered safe for consumption. Since lactate is a natural metabolic by-product in the human body, it is generally metabolised without issue. EFSA has not established a specific ADI (Acceptable Daily Intake) value, as the substance has been classified as safe at the levels used in food.
Special Considerations
- Potassium intake: Individuals with impaired kidney function or those who must follow a low-potassium diet (e.g., patients with renal insufficiency) should monitor their intake of potassium lactate, as it contributes to total potassium consumption.
- Lactose intolerance: Although potassium lactate is derived from lactic acid, it contains no lactose and is therefore safe for individuals with lactose intolerance.
- Vegan and vegetarian suitability: E326 can be of plant-based origin, depending on the source of the lactic acid used in its production.
Labelling and Regulation
In the European Union, E326 is authorised under Regulation (EC) No 1333/2008 on food additives. It must be declared on food ingredient lists either as E326 or as potassium lactate. The permitted maximum levels vary by food category; in many applications the quantum satis principle applies, meaning it is used at the level technologically necessary.
