What is E330 (Citric Acid)?
E330 is the EU-designated code for citric acid, an organic acid that occurs naturally in citrus fruits such as lemons, oranges, and grapefruits. In the food industry, citric acid is predominantly produced through microbial fermentation using molds such as Aspergillus niger. It is one of the most widely used food additives in the world and is also a fundamental component of human cellular metabolism.
Uses and Applications
E330 is used across a broad range of food products, beverages, cosmetics, and pharmaceutical preparations. Its primary functions include:
- Acidulant: Provides a tart, fresh flavor to foods and drinks.
- Preservative: Inhibits microbial growth by lowering the pH of products.
- Antioxidant: Protects foods from oxidative deterioration and discoloration.

Possible Side Effects
In very high amounts or in sensitive individuals, citric acid may cause the following effects:

- Gastric irritation at very high intake levels

For many food categories, it is subject to the quantum satis principle, meaning it may only be used in the minimum quantity necessary to achieve the intended technological effect.
