What is E332?
E332 is the EU food additive code for potassium citrates – salts of citric acid produced by neutralizing citric acid with potassium hydroxide or potassium carbonate. The designation E332 covers two compounds: monopotassium citrate (E332i) and tripotassium citrate (E332ii). Both compounds occur naturally in many fruits and are involved in normal human metabolism.
Use in Food Products
Potassium citrates are used in the food industry for several technological purposes:
- Acidity regulator: They buffer and stabilize the pH of food products within a desired range.
- Emulsifier and stabilizer: They improve texture and prevent the separation of fat and water, for example in processed cheese.
- Preservation aid: By regulating pH, they inhibit the growth of microorganisms.
- Flavor correction: They reduce excessive acidity in food products.
Typical products containing E332 include processed cheese, jams, jellies, soft drinks, confectionery, infant food, and various other processed food items.
Health Assessment and Safety
Potassium citrates are considered safe by the European Food Safety Authority (EFSA) and the World Health Organization (WHO). No numerical Acceptable Daily Intake (ADI) value has been established, as the substances are classified as safe for consumption. These compounds are fully metabolized in the body and excreted as carbon dioxide and water.
Potential Interactions
Since potassium citrates can increase potassium intake, individuals with kidney disease or those taking potassium-sparing medications (e.g., certain diuretics or ACE inhibitors) should exercise caution with very high consumption of processed foods containing this additive. For healthy individuals, normal dietary intake poses no risk.
Medical Applications
Beyond their use as a food additive, potassium citrates are also used medically. They are prescribed for the treatment and prevention of kidney stones (particularly calcium oxalate and uric acid stones), as they alkalize urine and increase the solubility of stone-forming substances. They are also used in the management of renal tubular acidosis.
Labeling and Regulation
In the European Union, E332 is authorized under Regulation (EC) No 1333/2008 on food additives. On ingredient lists, the substance may be declared either as E332 or as potassium citrate. In the United States, tripotassium citrate is classified by the FDA as GRAS (Generally Recognized As Safe).
