What is E335?
E335 is the European food additive number for sodium tartrates. These are the sodium salts of tartaric acid, which occurs naturally in grapes and other fruits. E335 covers two compounds: monosodium tartrate (E335i) and disodium tartrate (E335ii), depending on whether one or both hydrogen atoms of tartaric acid have been replaced by sodium.
Origin and Production
Sodium tartrates are primarily derived from cream of tartar, a by-product of wine production. Cream of tartar is the raw potassium hydrogen tartrate that deposits on the inner walls of wine barrels. Through chemical processing of this raw material, the sodium salts are produced. The substance can therefore be considered nature-identical or nature-derived.
Function and Use in Food
E335 is used in the food industry primarily for the following purposes:
- Acidity regulator: Sodium tartrates can stabilise and regulate the pH level of food products.
- Stabiliser: They improve the consistency and stability of foods, particularly in baked goods and confectionery.
- Buffering agent: E335 acts as a buffer, preventing unwanted changes in acidity during processing.
- Emulsification aid: In some products, E335 supports the uniform distribution of fat and water components.
Typical foods in which E335 may be found include leavening agents, processed cheese preparations, fruit jellies, jams, confectionery, and certain beverages.
Safety and Health Assessment
Sodium tartrates are considered safe by the relevant regulatory authorities. The European Food Safety Authority (EFSA) and the Joint FAO/WHO Expert Committee on Food Additives (JECFA) have evaluated E335 and established no specific Acceptable Daily Intake (ADI) value, which indicates that the substance is considered safe at typical consumption levels.
Tartrates are not significantly stored in the body and are excreted via the kidneys. At normal kidney function and typical consumption, there are no health concerns. However, individuals with impaired kidney function or those following a low-sodium diet should be aware that E335, as a sodium compound, contributes to overall sodium intake.
Labelling and Legal Status
In the European Union, E335 is authorised under Regulation (EC) No 1333/2008 on food additives. It must be declared in the ingredient list of packaged foods either as E335 or under the name sodium tartrates. Product-specific maximum permitted levels apply, which vary according to the food category.
