What is E340?
E340 is the European Union designation for potassium phosphates, a group of potassium salts derived from phosphoric acid. They are approved food additives widely used in the food industry. Depending on their chemical composition, three main forms are distinguished:
- E340(i) – Monopotassium phosphate (potassium dihydrogen phosphate)
- E340(ii) – Dipotassium phosphate (dipotassium hydrogen phosphate)
- E340(iii) – Tripotassium phosphate (tripotassium phosphate)
These compounds occur naturally in foods such as meat, fish, dairy products, and cereals, and also play a fundamental role in the human body as part of cellular energy metabolism.
Use in Food Products
Potassium phosphates serve several technological functions in food processing:
- Acidity regulator: They stabilise the pH value of food products, extending shelf life.
- Stabiliser: They prevent ingredient separation, for example in processed cheese or ready meals.
- Emulsifier: They support the even distribution of fat and water in food products.
- Buffering agent: They maintain a desired pH range throughout the production process.
Common food products containing E340 include processed cheese, meat products, baked goods, soft drinks, ready-made sauces, and soups.

Phosphate is a vital mineral for the human body and serves numerous functions:

- Involvement in DNA and RNA synthesis
- Regulation of the acid-base balance in the blood
Potassium, the second component of E340, is equally an essential mineral, particularly important for the functioning of nerves, muscles, and the heart.
Safety and Health Assessment
Potassium phosphates are considered safe by the European Food Safety Authority (EFSA) when used within the approved quantities. For most food categories, the principle of quantum satis applies, meaning that the additive is used in the minimum amount technically necessary.
However, evidence suggests that a chronically high phosphate intake – particularly through frequent consumption of heavily processed foods – may be problematic for certain groups:
- Individuals with kidney disease: Impaired kidney function reduces the body's ability to excrete excess phosphate, potentially leading to elevated blood phosphate levels (hyperphosphataemia).
- Cardiovascular risk: Some studies suggest that elevated phosphate levels may be associated with an increased cardiovascular risk.
- Bone health: A persistently unfavourable calcium-to-phosphate ratio may affect bone density over time.
For healthy individuals, occasional consumption of foods containing E340 is generally considered safe.
Labelling and Regulation
In the European Union, potassium phosphates are approved as food additives under Regulation (EC) No 1333/2008. When added to a food product, they must be declared in the ingredient list with their functional class (e.g., stabiliser, acidity regulator) and either their name or E-number.
