What is E405?
E405 is the EU designation for Propylene Glycol Alginate (PGA), a food additive approved for use as an emulsifier, stabilizer, and thickener. It is produced by the chemical esterification of alginic acid with propylene glycol. Alginic acid itself is naturally derived from brown seaweed, particularly species of the genera Laminaria and Macrocystis.
Origin and Production
The basis of E405 is alginic acid, a naturally occurring polysaccharide found in brown seaweed. Through esterification with propylene glycol, propylene glycol alginate is formed, which -- compared to pure alginic acid -- has improved solubility in water and acidic media, as well as enhanced emulsifying properties. This process makes E405 particularly stable at low pH levels and in the presence of calcium ions.
Use in Food Products
E405 is used in a wide range of food products to improve texture, consistency, and stability. Typical areas of application include:
- Salad dressings and sauces
- Beer and other beverages (for foam stabilization)
- Baked goods and confectionery products
- Dairy products and desserts
- Dietary foods and food supplements
In beer, E405 is particularly commonly used to stabilize foam, as it reduces surface tension and helps the foam last longer.
Technological Function
As an emulsifier, E405 promotes the even distribution of oil and water in a food product, preventing phase separation. As a thickener, it increases the viscosity of liquids and gives products a creamy or gel-like consistency. As a stabilizer, it ensures that food products maintain their desired texture and form over an extended period of time.
Safety and Approval
E405 is approved in the European Union under Regulation (EC) No 1333/2008 on food additives. The European Food Safety Authority (EFSA) has evaluated propylene glycol alginate and classified it as safe when used in the approved quantities. An acceptable daily intake (ADI) was not established by EFSA, as the substance is considered safe at typical consumption levels.
Propylene glycol alginate is broken down in the body into alginic acid and propylene glycol. Propylene glycol is metabolized in the liver and excreted without issue at normal intake levels. In very high amounts, propylene glycol can be toxic; however, this level is not reached through its regular use as a food additive.
Tolerability and Allergies
E405 is well tolerated by most people. Since it is derived from seaweed, individuals with known allergies to seafood or algae should exercise caution and consult a physician if in doubt. There are no known widespread intolerance reactions to propylene glycol alginate at normal consumption levels.
Labelling
In the European Union, E405 must be listed in the ingredient list of food products either as E405 or under its full name Propylene Glycol Alginate. This allows consumers to identify the additive and avoid it if necessary.
