What is E416 (Karaya Gum)?
E416 is the European food additive code for karaya gum, also known as sterculia gum or Indian tragacanth. It is a naturally occurring polysaccharide obtained from the dried resin of the Sterculia urens tree, which is native primarily to India and Pakistan. When added to water, karaya gum swells significantly and forms a viscous, gel-like mass without fully dissolving.
Origin and Production
Karaya gum is harvested by making incisions into the bark of the Sterculia urens tree. The exuded resin is dried in open air, then ground into a fine powder. The powder ranges in color from cream to light brown and has a slightly vinegar-like odor due to the presence of acetic acid.
Function and Use in Food
In the food industry, E416 is primarily used as a thickener, stabilizer, and emulsifier. Common applications include:
- Salad dressings and sauces
- Ice cream and desserts
- Baked goods and spreads
- Meat products
- Dietary foods (as a low-calorie bulking agent)
Use in Cosmetics and Pharmaceuticals
Beyond food, karaya gum is widely used in the cosmetics industry (e.g., in hair gels and lotions) and in pharmaceutical applications. Medically, it is used as a bulk-forming laxative, as it absorbs water in the intestine and increases stool volume. It is also used in ostomy adhesives and wound dressings.
Safety and Tolerability
Karaya gum is considered generally safe by both the European Food Safety Authority (EFSA) and the WHO and is classified as Generally Recognized As Safe (GRAS). It is barely absorbed by the body and passes through the digestive tract largely undigested. In very large amounts, it may cause bloating, diarrhea, or abdominal cramps. People with known hypersensitivity to karaya gum should avoid products containing it. Allergic reactions are rare but possible.
Regulatory Status in the EU
In the European Union, E416 is approved under Regulation (EC) No 1333/2008 on food additives. For many food categories, it is governed by the quantum satis principle, meaning the quantity used should be based on technological need, with no specific maximum level defined.
