When added to water, karaya gum swells significantly and forms a viscous, gel-like mass without fully dissolving.
Origin and Production
Karaya gum is harvested by making incisions into the bark of the Sterculia urens tree. The exuded resin is dried in open air, then ground into a fine powder. The powder ranges in color from cream to light brown and has a slightly vinegar-like odor due to the presence of acetic acid.
Function and Use in Food
In the food industry, E416 is primarily used as a thickener, stabilizer, and emulsifier. Common applications include:
