What is E432?
E432, commonly known as Polysorbate 20 or Polyoxyethylene sorbitan monolaurate, is a synthetic emulsifier derived from sorbitol and lauric acid (a fatty acid). It belongs to the polysorbate family and is widely used in the food industry, cosmetics, and pharmaceutical preparations. As an emulsifier, E432 helps stabilise mixtures of water and oil that would otherwise separate.
Uses and Occurrence
E432 is found in a broad range of products. In food manufacturing, it ensures a consistent texture and prevents ingredient separation. Typical applications include:
- Baked goods and confectionery (e.g., cakes, pastries)
- Ice cream and desserts
- Dressings, sauces, and condiments
- Chewing gum and sweets
- Fat-containing beverages
In the cosmetics industry, Polysorbate 20 functions as a solubiliser and emulsifier in creams, lotions, shampoos, and cleansing products. In pharmaceuticals, it serves as an excipient in tablets, ointments, and injectable solutions.
Mechanism of Action
Polysorbate 20 is a non-ionic surfactant. Its molecular structure contains both hydrophilic (water-attracting) and lipophilic (fat-attracting) segments. This dual nature allows it to position itself at the water-oil interface, reducing surface tension and forming a stable emulsion. Compared to other polysorbates (e.g., E433, E434, E435, E436), Polysorbate 20 contains a shorter-chain fatty acid (C12, lauric acid) and is particularly water-soluble.
Approval and Safety
E432 is approved as a food additive in the European Union and is regularly assessed by the European Food Safety Authority (EFSA). EFSA has established an Acceptable Daily Intake (ADI) of 25 mg per kilogram of body weight per day for polysorbates (E432-E436). When used as intended, E432 is considered safe for the general population.
Possible Intolerances
In sensitive individuals, skin irritation or allergic reactions may occasionally occur, particularly with topical application in cosmetic products. People with known sorbitol intolerance should exercise caution when consuming large amounts. Some animal studies have suggested that very high doses of polysorbates may affect gut microbiota; however, this is not considered relevant at typical human consumption levels.
Labelling Requirements
Food products containing E432 must declare this additive on the ingredient list either as E432 or as Polysorbate 20.
