E442 refers to ammonium phosphatides, an approved food emulsifier used primarily in chocolate production to achieve a smooth, uniform texture and consistency.
What is E442?
E442 is the European food additive number for ammonium phosphatides. It is a synthetically produced emulsifier derived from plant-based fatty acids (typically rapeseed oil) and ammonium phosphate. E442 is approved as a food additive in the European Union and is primarily used in the chocolate and cocoa industry.
Function and Application
Ammonium phosphatides act as emulsifiers, meaning they enable the uniform blending of fats and other ingredients that would otherwise not mix together. In chocolate production, E442 ensures that the cocoa mass achieves a smooth, workable consistency and does not become too viscous.
- Improves the flowability of chocolate mass
- Creates a uniform texture and surface in the final product
- Reduces the amount of cocoa butter needed
- Stabilises fat-water mixtures
Occurrence in Foods
E442 is mainly found in the following products:
- Chocolate and chocolate coatings
- Cocoa powder and cocoa beverages
- Chocolate confectionery and praline fillings
- Biscuits and baked goods containing chocolate
Origin and Production
E442 is typically derived from rapeseed oil. The fatty acids from the oil are reacted with glycerophosphoric acid and then with ammonia to produce ammonium phosphatides. The final product is free from genetically modified organisms when certified raw materials are used. E442 is considered an alternative to the commonly used soy lecithin (E322), particularly for individuals with a soy allergy.
Safety and Health Assessment
The European Food Safety Authority (EFSA) has classified E442 as safe. No adverse health effects have been identified at typical dietary intake levels. The additive is broken down in the body into its components and metabolised normally.
- No known allergenicity (unlike soy lecithin)
- Considered well-tolerated by most individuals
- Suitable for vegans as it is of plant origin
- No specific ADI (Acceptable Daily Intake) has been established, as the substance is considered safe
Labelling and Legal Requirements
In the EU, E442 must be declared in the ingredient list of a food product in accordance with Regulation (EC) No 1333/2008, either as E442 or as ammonium phosphatides. The maximum permitted level in chocolate under EU law is 10 g/kg.
