What is E451?
E451 is the EU designation for triphosphates (also known as tripolyphosphates), a group of phosphate salts approved as food additives. The main compounds in this group are sodium triphosphate (E451i) and potassium triphosphate (E451ii). They belong to the broader family of phosphates (E450–E452) and are authorized in the European Union under Regulation (EC) No 1333/2008.
Technological Functions
Triphosphates serve several important technological roles in food production:
- Emulsifying salts: They improve the melting properties of processed cheese products by binding calcium ions and creating a smooth, creamy texture.
- Water retention: In meat and fish products, they increase water-holding capacity, resulting in juicier products and reduced cooking loss.
- Stabilization: They help stabilize emulsions and prevent fat separation in processed products.
- pH buffering: They regulate acidity in foods, contributing to extended shelf life.
Common Food Applications
E451 is commonly found in the following food products:
- Processed cheese and cheese preparations

- Fish and seafood products (e.g., frozen shrimp)

- Instant soups and sauces
Health Assessment
The European Food Safety Authority (EFSA) has evaluated triphosphates and established an acceptable daily intake (ADI) of 40 mg/kg body weight per day for total phosphate intake (expressed as phosphorus). At moderate consumption levels of processed foods, E451 is considered safe.
However, the following considerations are relevant:
- Kidney function: Individuals with impaired kidney function should limit their intake of phosphates – including those from food additives – as the kidneys are responsible for excreting excess phosphorus.
- Calcium balance: Chronically high phosphate intake may affect the calcium-phosphate balance in the body and could potentially impact bone health over time.
- Cardiovascular risk: Some studies suggest that elevated phosphate intake may be associated with a higher risk of cardiovascular disease, particularly in individuals with pre-existing conditions.
Labeling Requirements
Under EU food law, E451 must be listed in the ingredient list of food products, either as E451 or under the name triphosphates. This allows consumers to identify whether a product contains this additive.
