What is E461 (Methylcellulose)?
E461, known by its chemical name methylcellulose, is a semi-synthetic food additive derived from cellulose, the natural structural component of plant cell walls. During production, some of the hydroxyl groups in the cellulose chain are replaced by methyl groups, giving the substance unique technological properties.
E461 belongs to the category of thickeners, emulsifiers, and stabilizers. It is approved for use in certain foods within the European Union and is labeled with the E-number 461.
Properties and Characteristics
Methylcellulose has a remarkable and unusual physical property: it is cold-soluble and forms a gel when heated, which then re-liquefies upon cooling. This phenomenon is known as inverse (or reverse) thermogelation and is unique among food-grade hydrocolloids.

- Forms a firm gel at temperatures above approximately 50 to 55 degrees Celsius
- Odorless and tasteless
- Non-digestible and non-absorbable by the human body
- Virtually calorie-free (not metabolized)

E461 is used across a range of food products to improve texture, consistency, and stability:
- Vegan and vegetarian products: Methylcellulose is widely used in plant-based meat alternatives, as it creates a meat-like binding texture when heated.
- Baked goods: Improves dough consistency and moisture retention
- Sauces and dressings: Acts as a thickener and emulsifier
- Diet foods: Provides a feeling of fullness without contributing calories
- Frozen products: Helps maintain structure during thawing
Use in Medicine and Pharmacy
Beyond food applications, methylcellulose is also recognized as a pharmaceutical active ingredient and excipient:
- Bulk-forming laxative: Methylcellulose absorbs water in the intestine, swells, and facilitates bowel movements. It is used in the treatment of chronic constipation.
- Artificial tears: Used in ophthalmic preparations as a viscosity-enhancing agent to protect and lubricate the surface of the eye.
- Tablet manufacturing: Serves as a binder, film-forming agent, and sustained-release matrix in pharmaceutical production.
Safety and Tolerability
Methylcellulose is considered safe by both the European Food Safety Authority (EFSA) and the U.S. Food and Drug Administration (FDA). Since E461 is not absorbed in the gastrointestinal tract, it does not accumulate in the body.
- No Acceptable Daily Intake (ADI) value has been established, as the substance is regarded as toxicologically safe.
- In very high amounts, bloating or mild digestive discomfort may occur.
- Allergic reactions are extremely rare and barely documented in the scientific literature.
- No special restrictions apply for pregnant women or children at typical dietary intake levels.
Labeling and Regulation
In the European Union, E461 is authorized under Regulation (EC) No 1333/2008 on food additives. Manufacturers are required to declare the substance in the ingredient list either as E461 or as methylcellulose. In the United States, methylcellulose is classified by the FDA as GRAS (Generally Recognized As Safe).
