What is E466?
E466, commonly known as carboxymethylcellulose (CMC) or cellulose gum, is a semi-synthetic additive derived from natural cellulose. In the food industry, it functions as a thickener, stabiliser, emulsifier, and gelling agent. The most widely used form is sodium carboxymethylcellulose (sodium CMC). E466 is approved as a food additive in the European Union and is considered safe by regulatory authorities such as the EFSA.
Production and Chemical Properties
CMC is produced by chemically modifying cellulose, a natural polysaccharide found in plant cell walls. Carboxymethyl groups are introduced into the cellulose chain through a reaction with chloroacetic acid. The resulting product is a white to off-white powder that dissolves readily in water, forming highly viscous solutions.
Uses in Food
E466 is used in a wide variety of food products, including:
- Baked goods and bread (improves texture and shelf life)
- Dairy products such as ice cream and yoghurt (prevents ice crystal formation, ensures creamy texture)
- Ready meals and soups (as a thickening agent)
- Gluten-free products (as a gluten substitute for dough binding)
- Diet and reduced-calorie foods (as a fat or sugar replacer)
- Beverages and juices (as a stabiliser)
Non-Food Applications
CMC is also widely used outside the food industry:
- Pharmaceuticals: As a binder and filler in tablets, and as a carrier in eye drops and gels
- Cosmetics: In toothpastes, creams, and lotions as a thickener
- Medicine: As a lubricant for dry eye conditions (artificial tears)
- Industry: In paints, paper, and textiles
Safety and Health Assessment
The European Food Safety Authority (EFSA) has evaluated E466 and classified it as safe when used within permitted limits. For many food categories, the quantum satis principle applies, meaning E466 may be used in the minimum quantity necessary to achieve the desired technological effect.
However, recent research suggests that high consumption of CMC may potentially affect the gut microbiome. Animal studies have shown that large quantities of CMC can trigger intestinal inflammation. In humans, these effects are less clearly established, and in 2023 the EFSA completed an updated safety assessment concluding that no significant risk to humans was identified at typical dietary intake levels.
Tolerability and Side Effects
E466 is well tolerated by most people. In rare cases, sensitive individuals may experience:
- Bloating and flatulence
- Changes in stool consistency
- Mild stomach irritation at very high intake levels
People with a sensitive gut or irritable bowel syndrome (IBS) should monitor their tolerance when consuming products containing CMC in high amounts.
Labelling
In the EU, E466 must be declared on food ingredient lists either as E466, carboxymethylcellulose, or cellulose gum.
