E472a is an approved food additive (acetic acid esters of mono- and diglycerides) used as an emulsifier in the food industry.
What is E472a?
E472a refers to acetic acid esters of mono- and diglycerides of fatty acids. It is a food additive approved in the European Union, produced either synthetically or from natural fats. The substance is commonly known by the acronym ACETEM (Acetic Acid Esters of Mono- and Diglycerides).
Origin and Production
E472a is produced through the chemical esterification of mono- and diglycerides with acetic acid. The raw materials used are typically derived from plant-based or animal fats. Depending on the source of the fats, E472a may therefore be either vegan or of animal origin. Those following a vegan or vegetarian diet are advised to check with the manufacturer regarding the exact source of raw materials.
Function and Application
As an emulsifier, E472a ensures that fat and water mix evenly in a food product and do not separate. Typical areas of application include:
- Baked goods (e.g., toast bread, cakes, bread rolls)
- Margarine and fat-based products
- Desserts and confectionery
- Ready meals and convenience foods
- Chewing gum
In addition to its emulsifying effect, E472a can also improve the texture, shelf life, and volume of baked goods.
Safety and Health Assessment
E472a has been evaluated by the European Food Safety Authority (EFSA) and the World Health Organization (WHO). The additive is considered safe at the levels typically used in food products (Generally Recognized As Safe). No specific ADI (Acceptable Daily Intake) has been established, as the substance is considered non-toxic. Allergic reactions to E472a are rare; however, individuals with fat intolerance or an allergy to the source raw materials should exercise caution.
Labelling and Legal Basis
In the European Union, E472a is approved under Regulation (EC) No 1333/2008 on food additives. On product labels, the additive must be declared either by its E number E472a or as acetic acid esters of mono- and diglycerides of fatty acids.
