What is E494 (Sorbitan Monooleate)?
E494 is the food additive designation for Sorbitan Monooleate, a synthetically produced emulsifier belonging to the group of sorbitan esters. It is formed by the esterification of sorbitol (a sugar alcohol) with oleic acid, a monounsaturated fatty acid. E494 is part of the so-called Span group of emulsifiers and is closely related to other sorbitan esters such as E491 (Sorbitan Monostearate) and E492 (Sorbitan Tristearate).
In the food industry, E494 is primarily used as an emulsifier, stabilizer, and release agent. It helps to combine or separate water and oil depending on the desired application.
Properties and Mechanism of Action
Sorbitan Monooleate (E494) is an oily, amber-colored liquid with a hydrophilic-lipophilic balance (HLB) value of approximately 4.3. This low HLB value makes E494 a typical water-in-oil emulsifier: it stabilizes emulsions in which water droplets are dispersed within an oil phase.
The mechanism of action is based on the amphiphilic molecular structure of E494: the molecule has a water-attracting (hydrophilic) sorbitol head and a fat-soluble (lipophilic) oleic acid tail. This dual nature allows the emulsifier to position itself at oil-water interfaces, thereby promoting a stable emulsion.
Uses in Food Products
E494 is used across a variety of food applications:
- Baked goods: Improving texture and extending shelf life
- Confectionery and chocolate: Regulating viscosity and preventing fat bloom
- Margarine and spreads: Stabilizing the emulsion
- Chewing gum: As a release agent and softener
- Whipping cream substitutes: Supporting foam formation
- Cosmetics and pharmaceutical products: E494 is also used outside the food sector as an excipient
Approval and Safety
E494 is approved in the European Union under Regulation (EC) No. 1333/2008 on food additives. The European Food Safety Authority (EFSA) has evaluated sorbitan esters, including E494, and classified them as safe when used within the established maximum limits.
The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 25 mg per kilogram of body weight per day for sorbitan monooleate, grouped together with other sorbitan esters.
Tolerability and Possible Side Effects
When used in approved quantities, E494 is considered well tolerated by the vast majority of the population. In rare cases, sensitive individuals may experience:
- Mild gastrointestinal discomfort when consumed in excessive amounts
- Possible skin reactions upon topical contact (e.g., in cosmetic products)
Individuals with a known sorbitol intolerance should consume products containing E494 with caution and consult their doctor if in doubt, as E494 is structurally derived from the sugar alcohol sorbitol.
Labeling
In the EU, food products containing E494 must list this additive in the ingredients list either by its name Sorbitan Monooleate or by its E-number E494. Consumers who wish to avoid food additives can check the ingredients list accordingly.
