E941 is nitrogen – a colorless and odorless gas used as a food additive for packaging and preserving food products.
What is E941?
E941 is the European approval number for nitrogen (chemical formula: N₂), a colorless, odorless, and tasteless gas that naturally makes up the largest portion of the Earth´s atmosphere (approximately 78%). In the food industry, nitrogen is used as a protective and propellant gas to shield food products from oxidation, moisture loss, and microbial spoilage.
Applications
E941 is used across a wide range of food categories. The most common applications include:
- Modified Atmosphere Packaging (MAP): Nitrogen is used alongside other gases such as CO₂ to displace oxygen inside packaging, thereby extending shelf life (e.g., in potato chips, salads, cheese, and processed meats).
- Propellant in aerosol products: E941 serves as a propellant in whipped cream dispensers and other food aerosols.
- Cryogenic freezing: Liquid nitrogen (at approximately −196 °C) is used for rapid shock-freezing of food items, preserving quality and cellular structure.
- Wine and beverage production: Nitrogen protects wine and other beverages from oxidation during storage and bottling.
Safety and Health Assessment
Nitrogen is considered physiologically inert – it is not absorbed or metabolized by the human body. The European Food Safety Authority (EFSA) and other international health authorities classify E941 as safe for use in food. There is no known toxicity, allergenicity, or harmful effect associated with its intended use.
Liquid nitrogen, however, can cause cryogenic burns if handled improperly and is intended exclusively for industrial use. In food products prepared directly with liquid nitrogen (e.g., instant ice cream), the nitrogen must be fully evaporated before consumption.
Authorization and Labeling
E941 is authorized in the European Union under Regulation (EC) No. 1333/2008 on food additives. Since nitrogen is often used as a processing aid or protective gas and does not remain in the final product, labeling on the packaging is not required in many cases. However, when E941 is used as a functional additive (e.g., as a propellant), it must be listed in the ingredients.
