What does aliphatic mean?
Aliphatic is a term from organic chemistry referring to carbon compounds that do not contain aromatic ring systems. The word derives from the Greek aleiphar (fat, oil) and encompasses all open-chain as well as non-aromatic cyclic hydrocarbon compounds.
In contrast to aromatic compounds such as benzene, aliphatic compounds do not possess delocalized electrons in a conjugated ring system. They can be saturated (e.g., alkanes) or unsaturated (e.g., alkenes, alkynes).

- Aliphatic alcohols: Ethanol is used as a disinfectant and solvent in pharmaceutical preparations.
- Aliphatic amines: Many neurotransmitters and drugs such as adrenaline and certain antihistamines contain aliphatic amine groups.
- Anesthetics: Some anesthetic agents, such as isoflurane, are aliphatic compounds.
Importance in Nutrition
Aliphatic compounds are found in many foods and fulfill important biological functions:
- Saturated fatty acids (e.g., in butter and meat) provide energy and serve as building blocks of cell membranes.
- Unsaturated fatty acids such as omega-3 and omega-6 fatty acids are essential for heart health, brain function, and the regulation of inflammation.
